Thank you for your suggestion! That makes complete sense.

To require levels only for those packages that really need it, you can disable the levels field in the booking engine guest form and enable the setting "request levels" at package level (see screenshot 1). This will display the field just on packages that really require it.

For additional details such as food allergies, you can decide from the customer portal settings > web check-in > guest fields, when they are displayed based on the guest's booked products (screenshot 2).
