Booking/Persons page filter options w custom fields

We have custom fields in the guest form (such as medical conditions and date of birth) and would like to be able to display these in both the booking screen and csv export. There are only predefined fields that can be selected.
The other way to do it is use the Persons page but then we need to have the guest check in date added as a filter so we can narrow down the list to the date the retreat starts will will show only the relevant guests for that retreat, otherwise it shows all guests. This is probably the easier option.
